I tried a different type of kale tonight, which I'd never noticed at the farmer's market before this past Saturday, although I'm sure it's been there. It's Spigariello Kale. I just steamed the heck out of it (it was still bitter at just a regular state of steaming) and put some white wine vinegar (yes, local) on it. It looked a lot like the green algae known as Sea Lettuce, but tasted much better.
