Eat Local Challenge Day 5


Succotash

Summer produce means succotash made with fresh corn, early girl tomatoes, fresh green beans, lima beans, red onion, garlic, and a wee bit of white wine vinegar. All local except the leftover frozen lima beans, but as per my own set of Eat Local Challenge rules I'm allowed to use what I already have as long as I replace them with local ones. Shouldn't be a problem...
