Eat Local Challenge Day 3


Heirloom Tomato Gazpacho

Not quite like the stuff from SOOP, which is pure bliss, but a pretty decent imitation if I do say so myself. I macerated half a shallot in white wine vinegar, blended it with a bunch of heriloom tomatoes, some basil and some sea salt. Simple & so, so yummy.
